Almond Carrot Power Balls


Ingredients:

  • 1 cup raw almonds 

  • 1/2 cup rolled oats or almond flour

  • 1/4 cup baby carrots 

  • 1 tablespoon unsweetened shredded coconut 

  • 1 tablespoon ground flax seed

  • 1 1/2 tablespoon maple syrup, honey or agave

  • 1 tablespoon coconut oil, melted 

  • 1/2 teaspoon vanilla extract 

  • 1 tablespoon dried cranberries, chopped


Method:

  1. Combine almonds & oats in a food processor and pulse until almost flour consistency

  2. Add carrots and process until finely chopped and incorporated.

  3. Add remaining ingredients except cranberries and process until dough comes together and almost forms a ball in the food processor.

  4. Transfer mixture to a small bowl and fold in cranberries.

  5. Roll into balls.

  6. Keep refrigerated.
