Pressure Cooker 5-Cheese Mac & Cheese

This amazing recipe is perfect for your Instant Pot or electric pressure cooker.  Simple ingredients make rich & creamy mac and cheese that is sure to please - in only 7 minutes!  Just a few hints for perfect mac and cheese in your pressure cooker:

  • Use a dense pasta shape.  Hollow pastas can overcook and collapse into mush.  A nice dense pasta like gemelli, fusilli or casarecce are perfect.  Experiment until you find your favorite!

  • The cheeses are up to you.  But try to use 3 or more for a nice blend that will also give you depth.  The gorgonzola gives a nice "bite" at the finish, but isn't required.

  • Make sure to add your cheese a small handful at a time.  Adding it all at once causes clumping.  This forces you to stir it in and starts to break down the pasta.

Ingredients:

  • 2 ½ cups gemelli pasta

  • 1 ½ cups chicken stock

  • ½ cup white wine

  • 1 cup heavy cream

  • ½ teaspoon salt

  • 1 teaspoon pepper

  • 1 tablespoon butter

  • ½ cup milk

  • 1 cup shredded sharp cheddar

  • ½ cup shredded parmesan

  • ½ cup shredded gouda

  • ½ cup shredded white cheddar

  • ¼ cup gorgonzola

 

Directions:

  • Place the gemelli, chicken stock, wine, cream, salt and pepper into an electric pressure cooker.Set your pressure cooker to high pressure and set timer for 7 minutes.Once the timer goes off let the pressure naturally release.

  • After pressure has released, add the butter and milk.Stir cheese into pasta a handful at a time to minimize clumping.Enjoy!
